Cheese Toast!

Because who doesnt like cheese toast?
This is something I threw together out of items I had in my 'fridge one day while looking for something to eat. It was incredibly tasty and healthy. Maybe they'll let me put it on the menu at the restaurant one week..

Avocado and Chicken Cheese Toast with Kalamata Olives
3-4 kalamata olives, sliced
1/2 an avocado
1 slice of whole grain bread
2 oz of cooked chicken (a small handful)
1/2 slice of cheese
salt, pepper, olive oil

Toast the bread in a pan under the broiler for a minute or two to warm it up and start the toasty goodness. Remove from oven, spread avocado on with a butter knife or the back of a spoon.
Top with chicken, olives and cheese.
Season with salt, pepper and a cheffy drizzle of olive oil.
Return to broiler for another 2 or so minutes, until cheese is melted to your liking and everything is heated through.

  • Make it Vegetarian - just X the chicken.
